- Lobster Risotto
Serves 6

In a large non-stick pan heat cooking oil on low heat. Add onion, garlic and sauté until softened. Add basil, Ferguson glaze, snow peas and tinned tomato. Cook for 2 minutes. Add rice and chicken stock. Place lid on pan and stir occasionally. Ensure the risotto remains moist, by adding liquid to the pot. When the rice is almost cooked add the cooked lobster meat. Heat through. Add parmesan cheese. Serve and garnish with parsley.
